Assisting the Head Chef in the overall running of the kitchen department.
Being capable of running the kitchen department in its entirety while the Head Chef is on leave/absent. Training the sous chef in new ideas when it comes to the preparation of 5* standard meals.
Menu planning: bringing fresh, new ideas forward with regards to menus.
Needs to have a good understanding of computers: kitchen admin and a good understanding of the lodge system will be essential.
Producing meals of a 5* standard for the lodge guests.
Menu planning for staff meals.
Orders/procurement for lodge food supplies.
Good communication skills within the team and with lodge food suppliers.
Always maintaining the 5* standard of the department.
Must possess good leadership skills to bring the kitchen department to the highest level.
Ensuring the highest standards in the fine details of plating and producing 5* dining experiences.
Proficient in staff training, stock taking, ordering, stock rotation, supervising, quality control, strong leadership skills etc.)
Salary: R 17 093.25 (depending on experience). This salary will be excluding the provident fund contribution or medical aid contribution (R1 471.67) & gratuities (tips).
Work 36 days on, 12 days off.
