- Cost Administration: Maintain strictly controlled food and beverage cost percentages without compromising on 5-star quality.
- Stock Takes: Conduct accurate weekly and monthly stock audits, analyze variances, and implement immediate corrective actions.
- Budgeting: Assist in compiling the annual F&B budget, forecasting revenue, and managing labor costs.
- Staff Management: Lead, mentor, and inspire a diverse team of field waiters, bartenders, boma staff, and scullery workers.
- Scheduling: Create efficient staff rosters that accommodate fluctuating lodge occupancy and required seasonal shift changes.
- Standards Enforcer: Implement and maintain strict 5-star hospitality operating procedures (SOPs) across all service teams.
- Compliance: Ensure total adherence to local health regulations, South African food safety standards, and international HACCP protocols.
- Wildlife Protection: Enforce strict waste management and food storage policies to prevent baboons, monkeys, and other wildlife from entering food areas.
- Experience: Minimum of 3–5 years of F&B management experience in a 5-star luxury lodge, Experience in a remote safari environment is highly advantageous.
- Qualifications: A diploma or degree in Hospitality Management, Food & Beverage Management, or a related field.
- Wine Knowledge: Formal wine qualification (e.g., WSET Level 2/3, Cape Wine Academy, or equivalent sommelier certification) is strongly preferred.
- Skills: Outstanding communication skills, strong financial acumen, and proficiency in hospitality POS and stock-control software (e.g., Micros, Apex, or Pastel).
- Attributes: High emotional intelligence, resilience for long hours on a live-in basis, excellent crisis management skills, and a genuine passion for the African bush.
- Live-In Position: Accommodation, utilities, and uniform provided on-site at the lodge staff village.
- Cycle: Standard remote lodge roster (e.g., 3 weeks on, 1 weeks off, or similar rotational cycle).
- Meals: All meals provided while on duty.

The Assistant Lodge Manager is responsible for supporting the Lodge Manager in the daily operation and administration of the lodge and reserve environment. The role includes overseeing guest services, coordinating operational activities across departments, supervising staff, maintaining hospitality and presentation standards and ensuring the efficient functioning of lodge operations. The Assistant Lodge Manager is also responsible for supporting compliance with health, safety, environmental and company standards while contributing to an exceptional guest experience and overall operational effectiveness.Key Responsibilities:
Guest Experience & Hospitality - Assist in managing all guest-facing lodge operations. - Ensure exceptional guest service standards are maintained at all times. - Welcome and host guests during check-in, meals, activities, and departures. - Handle guest requests, complaints, and special arrangements professionally. - Ensure guest feedback and reviews are monitored and addressed. - Support the creation of memorable safari and lodge experiences. Lodge Operations - Oversee day-to-day lodge operations in the absence of the Lodge Manager. - Ensure all departments operate efficiently and according to SOPs. - Monitor lodge presentation, cleanliness, maintenance and overall standards. - Coordinate operational logistics between housekeeping, kitchen, maintenance and guiding teams. - Assist with stock control and inventory management. - Ensure operational readiness for arrivals, departures and special events. Staff Management - Supervise lodge staff and assist with daily task delegation. - Support recruitment, onboarding, training, and staff development. - Assist in managing staff rosters, attendance and performance. - Promote teamwork, discipline and professional conduct. - Ensure staff comply with company policies and procedures. The Field Guide is responsible for conducting guided safari activities and delivering informative wildlife experiences in accordance with reserve standards and safety protocols. The role includes ensuring guest safety, interpreting the natural environment, supporting conservation initiatives, maintaining guiding equipment and vehicles and assisting with general lodge operations as required. The Field Guide is expected to uphold professional hospitality standards while contributing to the overall guest experience and operational effectiveness of the reserve.Key Responsibilities:
Guest Safari Experience
- Conduct guided game drives and bush activities in a safe and professional manner. - Deliver informative and engaging wildlife interpretations to guests. - Provide exceptional guest service and hospitality throughout safari experiences. - Ensure guests enjoy a memorable, educational and authentic bush experience. - Assist with guest hosting during lodge activities and special events.Wildlife & Conservation Responsibilities
- Track and locate wildlife using bush knowledge and fieldcraft skills. - Share knowledge on fauna, flora, ecology, conservation, and local ecosystems. - Monitor animal movements and report unusual wildlife activity or incidents. - Assist with reserve conservation initiatives and environmental management. - Promote responsible and ethical wildlife viewing practices at all times.Vehicle & Equipment Management
- Conduct daily inspections of safari vehicles and guiding equipment. - Ensure game drive vehicles are clean, fueled, and properly maintained. - Report mechanical or operational issues immediately. - Ensure radios, and safety equipment are functional and compliant.Guest Safety
- Ensure the safety and wellbeing of guests during all guided activities. - Adhere strictly to reserve safety protocols and operational procedures. - Conduct risk assessments before and during activities where necessary. - Respond appropriately during wildlife encounters and emergency situations.Lodge & Operational Support
- Assist with general lodge operations when required. - Coordinate with lodge management regarding guest schedules and activities. - Support maintenance of roads, viewing points, and field infrastructure where necessary. - Assist with transfers and other operational duties as required.Administrative Duties
- Complete guiding reports, sighting records, and vehicle checklists accurately. - Maintain accurate logs of fuel usage, mileage, and guest activities. - Assist with photographic and marketing content when required.Minimum Requirements:
- FGASA qualified and DEAT registered - Valid PDP (Professional Driving Permit). - Valid First Aid certification. - Previous guiding experience within a private game reserve or safari lodge environment. - Excellent knowledge of wildlife, ecology, and conservation principles. - Strong communication and interpersonal skills. - Ability to work flexible hours, weekends, and public holidays. - Ability to work in remote bush environments.Advantageous Qualifications:
